Hudson Valley Mixology Rethinks Holiday Cocktail Menus

Cedar Lakes Estate beverage director Jenny Megill introduces farm-driven drinks and batchable zero-proof options.

Autumn entertaining across luxury venues is moving away from heavy punches and standard pours, leaning instead into estate-grown herbs, regional sweeteners, and structured non-alcoholic recipes designed for large gatherings.

At Cedar Lakes Estate in Port Jervis, New York, the property’s beverage director Jenny Megill has revamped the seasonal roster around local agriculture and low-intervention flavor profiles. Megill, a 20-year hospitality industry veteran with an extensive background in Washington, D.C. and Northern Virginia venues, designs event drink service around the rhythms of destination weddings and weekend retreats, including the upcoming Jenna & Sheinelle’s Girls Getaway.

Modern event pacing increasingly emphasizes an immediate sensory welcome. Rather than conventional flutes of dry sparkling wine, Megill introduces arrivals through scaled-down welcome drinks dubbed “Amuse Booze.” For autumn, that role falls to a Blood Orange-Pomegranate Margarita, balancing citrus acidity and deep red fruit tannins against standard agave profiles. The presentation provides a calibrated opening pour that sets a celebratory tone without overwhelming early dinner courses.

Regional sourcing also anchors spirit-forward offerings. The Tiny Ducks Cocktail combines Irish whiskey with Amaro Nonino, softened by Hudson Valley honey, fig jam, and freshly clipped garden thyme. The layered profile mirrors a broader national trend in high-end bars, where Italian aperitifs and herbal amaros substitute for classic vermouths to produce warmer, digestive-friendly winter profiles. The drink draws its name from miniature plastic ducks that staff members hid throughout the estate grounds.

For effervescent options, Megill modifies the century-old French 75 framework. The Spiced Pear French 75 replaces summer citrus syrups with a spiced reduction featuring cinnamon, clove, vanilla, and ripe pear, finished with fresh lemon juice and sparkling wine. The dense spiced syrup also functions across multiple beverage stations, offering back-bar utility as a base for hot spiced cider or non-alcoholic table sodas.

Zero-proof inclusivity represents another decisive operational shift for event hosts. The Sans-Gria serves as a batch-friendly alcohol substitute blending ginger, orange, pomegranate, and warm spices. Demand for complex, alcohol-free hospitality options continues to rise nationwide as hosts accommodate sober and moderation-focused attendees without defaulting to commercial fruit sodas or plain sparkling water.

Cedar Lakes Estate is currently preparing for its late-October getaway programming, alongside seasonal winter bookings scheduled to open across the Orange County retreat.
