Noodles & Company Adds Permanent Ramen Menu Nationwide
The fast-casual chain introduces three brothless bowls, including a Korean-Italian fusion, after a limited-time test drove 150,000 new customers.

Noodles & Company is permanently adding ramen to its menu nationwide, introducing three brothless bowls designed to expand the fast-casual chain’s noodle offerings beyond traditional pasta and pan-Asian staples. The rollout begins today at all U.S. locations, through the brand’s mobile app, and online.
The decision follows a limited-time test of Chili Garlic Ramen that drew more than 150,000 new customers, according to the company. That trial demonstrated sufficient demand to justify establishing ramen as a core category rather than a seasonal promotion.
Unlike traditional Japanese ramen built around slow-simmered broths such as tonkotsu or shoyu, Noodles & Company engineered its dishes as dry, sautéed bowls. This approach aligns with the chain’s existing kitchen operations, which rely on high-heat wok stations for tossing noodles with sauces rather than maintaining dedicated soup kettles. Brothless preparations, similar to Japanese abura soba or mazesoba, allow the chain to integrate ramen without requiring significant equipment changes or extended preparation times during peak service hours.
Two of the three launch items are limited-time offerings. Gochujang Carbonara Ramen Noodles fuses Korean fermented chili paste with Italian carbonara components, combining bacon, napa cabbage, red cabbage, and a Parmesan-based sauce. Sweet Sesame Steak Ramen Noodles pairs marinated steak, carrots, and red peppers with sesame seeds and cilantro.
The third item, Spicy Korean Steak Ramen Noodles, serves as the anchor for the permanent category. It adapts an existing menu staple — Spicy Korean Steak Noodles — by swapping the original noodle base for ramen strands while retaining the gochujang barbecue sauce, marinated steak, napa and red cabbage, spinach, cucumber, scallions, and cilantro. Modifying proven bestsellers with new textures is a common risk-mitigation strategy in fast-casual product development, leveraging established flavor profiles to reduce consumer hesitation.
“We’ve spent more than 30 years exploring what’s possible with noodles, and ramen gives us another incredible canvas for flavor and creativity,” said Tina Massey, vice president of culinary R&D at Noodles & Company. “What I love about this lineup is that each bowl delivers a completely different experience.”
Dwayne Chambers, interim chief marketing officer, noted that the response to the initial chili garlic test proved guests were ready for the chain to explore the format further.
Founded in 1995 in Denver, Colorado, Noodles & Company operates roughly 450 locations across the United States. The chain has historically cycled through various global cuisines, offering dishes inspired by Mediterranean, Japanese, and Southeast Asian traditions. Adding a dedicated ramen category represents one of the most significant structural changes to the core menu in recent years, targeting younger demographics who increasingly favor bold, globally inspired flavors over standard Americanized pasta dishes.
To drive adoption, the chain is tying the launch to its loyalty program. New members who join Noodles Rewards receive a free regular entrée after an initial purchase of $10 or more. Members accumulate points on orders redeemable for food and gain early access to future menu tests. The two limited-time bowls are currently available alongside the permanent spicy steak option.
