Bills Fans Get New Game-Day Cocktail: ‘Gam Gam’s Secret’ Blends Corn Whiskey, Serrano Heat
Corn whiskey, serrano heat, and a Beerfest nod fuel the latest fan-created tailgate drink

Buffalo Bills fans preparing for Monday night’s matchup have a new addition to their tailgate arsenal: a corn whiskey cocktail inspired by a cult comedy classic and designed to honor Western New York spirits.
The drink, dubbed “Gam Gam’s Secret,” emerged from a weekly recipe series that pairs Bills-themed food and beverages with each opponent. This week’s creation draws its name — and its backstory — from the 2006 film “Beerfest,” where a character named Gam Gam reveals a potent family recipe during a memorable dinner scene. The movie’s devoted following among Bills supporters made the reference an obvious fit.
“If you can drink this, you can drink almost anything,” the recipe’s creator wrote, echoing the film’s tone. The cocktail adapts the classic Brown Derby — traditionally bourbon, grapefruit, and honey — by swapping in corn whiskey and infusing it with serrano pepper for a subtle, warming heat.
Corn whiskey, a clear, unaged spirit made primarily from maize, has deep roots in American distilling but has largely been overshadowed by bourbon and rye. Brands like Mellow Corn, produced by Heaven Hill in Kentucky, keep the category alive at a fraction of the price of aged whiskeys. Its neutral, slightly sweet profile makes it a versatile mixer, and its yellow hue accidentally mirrors the golden liquid in the “Beerfest” scene.
The recipe calls for soaking chopped serrano pepper in a shot of corn whiskey for two to three hours, then combining two ounces of the spirit with one ounce each of fresh grapefruit juice and honey syrup. Shaken over ice and strained, the batch yields roughly eight servings. The creator notes bourbon works as a substitute but prefers corn whiskey for its lighter body and regional resonance.
Game-day food culture in Buffalo has long revolved around wings, beef on weck, and beer. In recent years, craft cocktails have gained traction at Highmark Stadium and in home bars across the region, reflecting a national shift toward spirit-forward drinks at sporting events. The NFL’s 2023 policy allowing cocktail sales at stadiums accelerated the trend.
The weekly recipe series, now in its second season, has produced everything from Miami-themed key lime pies to Kansas City burnt-end sliders. Each installment drops Sunday to give fans time to shop and prep before kickoff.
“We love the Bills. We love food,” the author writes. The series has cultivated a following among self-described “Rumblers” — a nod to the team’s drumline — who share results and modifications online.
Food safety experts remind home mixologists to wash produce thoroughly, use clean utensils, and keep infusions refrigerated. The serrano soak should not exceed 24 hours to avoid bitterness. As always, the recipe carries a 21-and-over warning and a reminder to drink responsibly.
Mellow Corn retails for roughly $15 a bottle in New York State liquor stores. Grapefruit juice, honey, and serranos are widely available at supermarkets.
